Chocolate Snowball is a collection of fabulous pastry recipes from the Deer Valley Bakery. Letty Halloran Flatt, Deer Valley executive pastry chef, has gathered together 125 recipes in her sumptuous cookbook of Deer Valley favorites – including the signature dessert, Chocolate Snowball. Deer Valley hires new bakers every autumn to gear up for the busy ski season.  The bakeries literally become a small pastry school with the lodge pastry chefs and me teaching the uninitiated bakers as much as we can.  We develop their skills, witness their mistakes, answer questions and nurture them through the learning curve.  In this book, I strive to be your baking mentor.  Helpful hints are offered throughout, guiding you through the recipes.

Just as a ski area rates its trails according to skier ability, the recipes in this book are rated according to ease of preparation.  You’ll see these guiding symbols on every recipe in the book:

Easier recipes have fewer and simpler steps and can be used as learning recipes by novice bakers.

Intermediate recipes are more complicated and might require special equipment.

Advanced and Expert recipes have multiple steps and more difficult techniques – and they will take more time.

A beginner baker could tackle an Advanced recipe with success, just as beginning skiers have found themselves on Advanced runs and conquered the challenge triumphantly.  The symbols should be helpful to guide you in making recipe choices.
